Stovetop New Orleans Style Red Beans for 2

Ingredients:

Directions:

  1. Open contents of bean package. Rinse and sort beans.

  2. Add beans and 5 cups water to a medium-sized pot over high heat. 

  3. Bring beans to a boil for 10 minutes, and stir in contents of seasoning packet.

  4. Reduce heat, cover and simmer, stirring occasionally for 1 to 1 ½ hours or until beans are tender. Add water, if needed, in 1 cup increments.

Optional:

  1. Make it meaty. Add pre-cooked sliced smoked sausage or chopped ham when adding the seasoning packet.
  2. Make it creamy. For a creamier texture, mash a portion of the beans when tender.
  3. Keep it veggie (or vegan). Add your favorite plant-based protein.
  4. Go classic. Serve over cooked rice with cornbread or French bread.
