Ingredients:
- 1 (1-pound) package Camellia Brand Pink Beans
- 1 tablespoon extra virgin olive oil
- 2 cups chopped white onion
- 2 cups chopped bell pepper
- 2 tablespoons chopped garlic
- 2 tablespoons chili powder
- 4 teaspoons dried thyme
- 2 cups chopped fresh tomato
- 1 (14 1/2-ounce) can no-sodium chicken broth
- 1 (6-ounce) can tomato paste
- 1 cup water
Directions:
- Rinse and sort beans. (Optional: Soak beans using your preferred method.)
- In a skillet, sauté onion, bell pepper and garlic in olive oil until soft.
- Add sautéed vegetables and all remaining ingredients to slow cooker. Stir well.
- Cook on low for 6-8 hours.
