Cowboy Beans and Rice

Ingredients:

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup long grain white rice, uncooked
  • 3/4 cup water
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 1/2 cups cooked Camellia Brand Pinto Beans
  • 12 ounces tomato juice
  • 4 ounces green chilies, chopped, undrained

Directions:

  1. Cook ground beef, onions, and peppers in a skillet over medium heat, stirring till ground beef is brown and crumbled. Drain off any grease. 
  2. Combine meat mixture, rice, water, chili powder, salt, beans, tomato juice, and chili peppers; stir well.
  3. Pour into 3-quart casserole dish. Cover and bake at 350°F for 50 minutes.
  4. Stir, cover and bake again for an additional 30 minutes, or until rice is tender.
