Ingredients:
- 1 (1-pound) package Camellia’s Red Beans
- 1 pound smoked sausage, sliced
- 8-10 cups water
- 1/4 stick of butter
- 2 cups chopped seasoning blend (onions, celery, green bell peppers, parsley flakes)
- 1 toe garlic, chopped
- 1 bay leaf
- Salt to taste
- Pepper to taste
- Cajun seasoning to taste
- Hot cooked rice
Directions:
- Rinse and sort red kidney beans. (Optional: Soak beans using your preferred method.)
- In large heavy pot, cook sliced sausage for 5 minutes.
- Add chopped seasoning blend and garlic to cooked sausage, along with 1/4 stick butter, and continue to cook until onions turn soft and clear.
- Add beans, water, and bay leaf.
- Bring to rolling boil for 30 minutes, stirring every 10 minutes.
- Reduce heat, simmer for 1-2 hours, stirring occasionally, until beans are desired tenderness.
- Add Cajun seasoning plus salt and pepper to taste.
- Serve over hot cooked rice.

What is your choice of meat for the seasoning and why> Also, if you use ham hocks, how do you prepare them and how many does it take?

I made this for dinner last night - one of my children went for thirds. Barely enough leftovers for lunch! Very easy to put together, full of flavor!!!
Great recipe -- I'm an avid home chef and we love beans and rice but this one might have been my best. Made a couple adjustments, added some Chipotle powder and cilantro and a ham bone, but all of our, 10 kids, loved it. Thank you again.
I add chunks of honey smoked smoked, or brown sugar ham, somtimes prime rib !

I add ham hocks also. After serving I also add a spoon of mayo Don't say NO it emphasizes all the flavors try it you may love it
