Ingredients:
- 4 medium sweet potatoes
- 1 1/2 cups cooked Camellia Brand Black Beans
- 1 large avocado, pitted and chopped
- 3/4 cup chopped cilantro
- 1/2 cup diced green onions
- 1/4 cup pepitas
- Greek yogurt or sour cream
- 1 lime, cut into wedges
Directions:
- Preheat oven to 400 degrees. With a fork or sharp knife, pierce each sweet potato 5-6 times.
- Place sweet potatoes on a foil-lined baking sheet and bake for 45 minutes to 1 hour, or until tender. (If in a hurry, microwave on high for 5-8 minutes.)
- When cool enough to handle, cut open sweet potatoes and fluff/mash the insides with a fork.
- Top each potato with cooked black beans, Greek yogurt or sour cream, avocado, cilantro, green onions, and pepitas. Squeeze limes wedges over all. Salt and pepper to taste.
- Serve immediately.
