Ingredients:
- ½ pound Italian sausage, crumbled
- 1 large onion, sliced
- 1 clove garlic, smashed
- 2 cups water
- 1 (1-pound) package Camellia Brand Baby Lima Beans
- 3/4 teaspoon ground cumin seed
- 1 hot red pepper, seeded and chopped
- Salt and freshly ground black pepper
Directions:
- Rinse and sort beans. (Optional: Soak beans using your preferred method.)
- Place the sausage, onion, and garlic in a heavy casserole or saucepan and saute until light brown.
- Add the water and bring to a boil.
- Add the beans, cumin seed, and hot pepper and bring to a boil.
- Cover, reduce heat, and simmer 20 minutes.
- Season with salt and pepper.
