Baby Lima Beans with Italian Sausage

Ingredients:

  • ½ pound Italian sausage, crumbled
  • 1 large onion, sliced
  • 1 clove garlic, smashed
  • 2 cups water
  • 1 (1-pound) package Camellia Brand Baby Lima Beans
  • 3/4 teaspoon ground cumin seed
  • 1 hot red pepper, seeded and chopped
  • Salt and freshly ground black pepper

Directions:

  1. Rinse and sort beans. (Optional: Soak beans using your preferred method.)
  2. Place the sausage, onion, and garlic in a heavy casserole or saucepan and saute until light brown.
  3. Add the water and bring to a boil.
  4. Add the beans, cumin seed, and hot pepper and bring to a boil.
  5. Cover, reduce heat, and simmer 20 minutes.
  6. Season with salt and pepper.
