<ol>
<li>Heat a well-seasoned 10-inch cast-iron pan over medium-high heat.</li>
<li>In a small bowl, stir together pork and barbecue sauce.</li>
<li>Place 1 tortilla on a clean work surface. Spreading each in an even layer, add 1/2 cup pork mixture, 1/4 cup collard greens, 2 tablespoons black-eyed peas, 1 tablespoon relish, and 1/2 cup cheese. Top with another tortilla. Using a large spatula, transfer to hot pan.</li>
<li>Cook until golden brown and cheese is melted, about 2 minutes per side. Repeat with remaining ingredients. Serve with additional barbecue sauce, if desired.</li>

<h4>Sweet Potato Fries</h4>

<li>In a small bowl, combine sliced red onion, red wine vinegar, sugar, and salt, stirring until sugar dissolves. Set aside.</li>
<li>In another small bowl, combine mayonnaise, chipotle peppers, and lime juice until smooth. Set aside.</li>
<li>In the work bowl of a food processor, pulse together mushrooms, minced red onion, and garlic until finely chopped. Add panko, egg, chili powder, black pepper, and salt; pulse until incorporated. Add 5 cups black beans and green onions; pulse until combined. Transfer to a large bowl, and stir in remaining 1 cup black beans. Divide mixture into 8 patties. Refrigerate patties for 30 minutes.</li>
<li>Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.</li>
<li>In a large bowl, toss together sweet potato sticks, 2 tablespoons oil, and salt. Arrange in a single layer on prepared baking sheet. Bake until golden brown and crisp, 20 to 25 minutes. Sprinkle with additional salt, if desired.</li>
<li>Meanwhile, on a large griddle, heat 2 tablespoons oil over medium-high heat. Add patties and cook until browned on both sides and heated through, 3 to 4 minutes per side. Add cheese and cook until cheese is melted, 1 to 2 minutes more.</li>
<li>Serve burgers on toasted buns with arugula, chipotle mayonnaise, and pickled red onions. Serve with sweet potato fries.</li>

<li>Line a baking sheet with parchment paper and set it aside.</li>
<li>To a skillet over medium-high heat, add ground beef and season with salt. Break up the meat with a spatula and continue cooking, stirring occasionally, until completely browned.</li>

<li class="p1"><span class="amount">¼ cup</span> chopped <span class="name">sun-dried tomatoes</span> (not packed in oil)</li>
<li class="p1"><span class="amount">½ teaspoon</span> <span class="name">lemon juice</span></li>
<li class="p1"><span class="amount">½ cup</span> chopped fresh <span class="name">basil</span>, packed</li>
<li class="p1"><span class="amount">1 tablespoon</span> <span class="name">flour</span>, plus more if needed</li>

<p>1. Crack egg in a large bowl and beat well. Add beans and stir. With a potato masher, mash beans until relatively smooth, but with some texture remaining.</p>
<p>2. Add cooked rice and stir to distribute evenly. Stir in garlic, tomatoes, lemon juice, basil, flour, Parmesan, salt and pepper. Mix until well combined. This may be easier to do with your hands.</p>
<p>3. Roll small handfuls into eight balls. If mixture is too wet to hold together well, add more flour, a tablespoon at a time. If it’s too dry, add the white of another egg, or a whole egg, if needed.</p>
<p>4. Press each ball to form a patty about 2-1/2 to 3 inches wide. (At this point, patties can be stacked on a plate, covered and refrigerated to cook up to four hours later.)<span class="Apple-converted-space">   </span></p>
<p>5. In a large skillet, heat olive oil and butter over medium heat. Cook patties a few at a time, about 3 minutes on each side, until golden brown. Transfer to a bun or onto a salad.</p>
<p>6. Any remaining patties can be refrigerated in zip-top bags or airtight containers. <ol>
<li>Heat the vegetable oil in a frying pan over medium heat. Caramelize the onion, bell pepper, celery and garlic in the vegetable oil.</li>
<li>Place the cooked rice and cooked red beans in the food processor; pulse until smooth and transfer to large bowl.</li>
<li>Fold the caramelized vegetables, bread crumbs, green onion and parsley into the rice and bean mixture. Season with salt and black pepper.</li>
<li>Shape the bean mixture into small slider-size patties.</li>
<li>Preheat a large, nonstick skillet over medium heat. Add patties to skillet.</li>
<li>Cook for 6 to 8 minutes or until heated through and browned, turning patties once.</li>
<li>Serve sliders on rolls, dressed with desired toppings.</li>
