<ol>
<li>Cook red beans with Red Bean Flavor Infusion according to package directions. Drain excess liquid, reserving 1/2 cup. Measure 2 1/2 cups cooked beans for use in recipe, and store remainder.</li>
<li>Heat oil in a skillet over medium heat. Sauté onions and garlic until soft, about 3-4 minutes.</li>
<li>To a blender or food processor, add 2 1/2 cups cooked beans,  sautéed onion and garlic, 1/2 cup roasted red peppers, and cayenne or hot sauce. Add lime juice. Blend, adding reserved bean liquid until smooth.</li>
<li>For a creamier dip, add and blend sour cream or Greek yogurt until fully incorporated.</li>
<li>Taste and adjust seasoning as needed with salt and pepper.</li>
<li>Garnish with cilantro, green onions, shredded cheese, finely chopped bell pepper, and sliced jalapeno or serrano peppers, if desired.</li>
<li>Serve with bell pepper slices, chips, or crackers.</li>

<li>In a large pot over medium heat, sauté onions and garlic in olive oil until soft. Add tomatoes and cook, mashing tomatoes against the side of the pot. Add curry powder and stir.</li>
<li>Add spinach to pot, and cook until wilted. Add cooked peas, 1 cup of reserved pea cooking liquid, and simmer over low heat until liquid evaporates.</li>
<li>Add lemon juice and stir. Serve with a dollop of yogurt on top.</li>

<li>In a large pot, cover beans with water. Add onion and 11 of the garlic cloves; bring to a boil. Reduce heat and simmer for about 1 hour, until beans are tender.</li>
<li>Drain beans, onions, and garlic, reserving bean liquid. Purée bean mixture in food processor, adding some reserved liquid if needed. Season with salt and pepper.</li>
<li>Chop sun-dried tomatoes, and soak for 20 minutes in reserved bean liquid to soften.</li>
<li>Drain tomatoes and fold into bean purée, along with yogurt. Season with salt, pepper, and red pepper.</li>
<li>To assemble, grill or toast bread slices, and rub each slice with a cut garlic clove.</li>
<li>Spread slices with purée and top with chopped greens.</li>

<li>Pour mixture into slow cooker; stir. Cover; cook on low 6 hours.</li>
<li>Increase heat setting to high. Stir in green beans. Cover; cook about 15 minutes longer or until green beans are heated through, but still crisp.</li>
<li>Serve topped with yogurt.</li>
