<h3>Directions:</h3>
<ol>
<li>Heat oil in a large Dutch oven set at medium-high. Add the chaurice sausage, and, using a wooden spoon, break up the sausage into bite-sized chunks. Stir and cook until the sausage is fully opaque, about 8 minutes. (If also using pork tenderloin, do not add yet.)</li>
<li>Add onion and cook until translucent, about 6 minutes.</li>
<li>Add celery and bell pepper and cook until soft, about 5 minutes.</li>
<li>Add Camellia Brand Red Kidney Beans, dried thyme, tomatoes, garlic, and Pork &amp; Veal Magic®. (If using diced pork tenderloin, add it at this time.) Bring to a boil, cover, reduce heat to medium-low and cook until slightly thickened, about 30 minutes, stirring occasionally.</li>
<li>Add tomato paste and stir until thoroughly combined, taking care not to break up the beans</li>
<li>Bring chili to a boil, stir in green onions and add Kosher salt to taste. Cover, remove from heat and let stand for 20 minutes before serving.</li>
<li>Garnish individual bowls of chili with fresh thyme leaves.</li>

<li>Rinse and sort beans; soak if desired (soaking Small Red Beans is optional).</li>
<li>In a Dutch oven or soup pot, h<span class="s1">eat oil and add onion, garlic, and jalapeño; cook and stir over medium heat until onion is soft and translucent, about 5 minutes.</span></li>
<li>Increase to high heat, add broth and beans and bring to a boil for 10 minutes.</li>
<li>Reduce heat and simmer, stirring occasionally, for 1 hour or until beans are tender. Add water or broth if needed to keep beans covered while cooking.</li>
<li>Add remaining ingredients and continue simmering on low heat, stirring occasionally, until potatoes are tender, about 20-30 minutes. For extra creamy beans, smash a few spoonfuls of beans against the inside of the pot.</li>
<li class="paragraph_break">Season to taste with hot sauce and salt.</li>
<li class="paragraph_break">Serve with hot cooked rice; garnish with chopped cilantro. </li>

<li class="li2"><span class="s2">Press the Sauté button on the Instant Pot, and add the oil. Add pickled pork and sauté 5 minutes or until browned. Remove pickled pork to a paper-towel lined plate and reserve.</span></li>
<li class="li2"><span class="s2">Add onions, bell pepper, celery, garlic and tomato paste to Instant Pot, and sauté until vegetables are soft. </span></li>
<li class="li2"><span class="s2">Add pickled pork back to the pot, along with blackeye peas, water or broth, and bay leaves. Stir well.</span></li>
<li class="li2"><span class="s2">Turn Sauté mode off. Cover Instant Pot, twist to lock the lid, and turn the valve to sealing. Press the Beans/Chili button, or use the Manual mode and set to 30 Minutes.</span></li>
<li class="li2"><span class="s2">When the timer beeps, allow the pressure to release naturally for 20 minutes. Then, turn the valve to venting.</span></li>
<li class="li2"><span class="s2">Remove lid. If a creamier texture is desired, and use the back of a spoon or potato masher to mash peas to desired consistency. Adjust seasonings to taste.</span></li>
<li class="li2">Serve over hot cooked rice with cornbread or hot buttered French bread. Garnish with chopped green onions.</li>

<li class="li4"><span class="s2">If after cooking, peas are soft but there’s too much liquid remaining, use Sauté mode and cook till thickened.</span></li>
<li class="li4"><span class="s2">If peas are not soft enough after cooking, </span><span class="s3">put the lid back on and make sure the release valve is set to sealing. Use Manual mode to cook at high pressure for another 5 to 10 minutes. The pot will quickly come back up to pressure because the contents are already hot.</span></li>

<li>Sauté garlic and onion in butter, until limp, about 4 minutes, in a large pot. Stir in brown sugar and cook until onion and garlic are browned slightly, about 2-3 minutes.</li>
<li>Add red wine vinegar, tomato paste, chicken broth, cumin, cayenne, chili powder, and wine to pot. Bring to a simmer and cook approximately 35 minutes, or until liquid is reduced by half.</li>
<li>In a skillet, fry the bacon in oil until it browns. Remove bacon from pan and set aside. When cool, chop into small pieces.</li>
<li>Brown the ground meat in bacon grease, about 20 minutes. Drain thoroughly.</li>
<li>Add bacon, beef, and beans to reduced wine mixture. Bring to a simmer and cook until chili has thickened, about 20 minutes.</li>
<li>Add salt to taste.</li>

<li>Soak the dried pinto beans for 2 hours in cold water in a pot.</li>
<li>Bring the pot to the boil, do not cover the pot and simmer for about 10 minutes. Make sure the beans become do not become tender.</li>
<li>Drain and rinse the cooked beans under cold water and set them aside.</li>
<li>Heat the olive oil in the pot and stir in the onions, sauté for 2 – 3 minutes, until they start to soften.</li>
<li>Add the carrots, and whole garlic cloves combine well and sauté for another 2 minutes.</li>
<li>Stir in the tomato paste and sugar, season with salt. Combine well.</li>
<li>Add the beans to the pot and give it a good mix. Then pour in the water, combine well.</li>
<li>Bring the pot to the boil; then turn the heat to low, cover the pan.</li>
<li>Simmer for 30 to 35 minutes, until the beans are cooked (but not mushy). Check the seasoning and add a little more salt if needed.</li>
<li>Serve at room temperature or cold, garnished with chopped parsley and wedges of lemon by the side. Alternatively garnish it with fresh arugula leaves and shredded parmesan.</li>

<li><span class="amount">1 pound</span> <span class="name">pickled pork</span>, cubed to ½ inch</li>
<li><span class="amount">1</span> large <span class="name">onion</span>, chopped</li>
<li><span class="amount">1</span> large <span class="name">green bell pepper</span></li>
<li><span class="amount">3 stalks</span> <span class="name">celery</span>, chopped</li>
<li><span class="amount">4 cloves</span> <span class="name">garlic</span>, chopped</li>
<li><span class="amount">1 tablespoon</span> <span class="name">tomato paste</span></li>
<li><span class="amount">10 cups</span> lightly salted water or <span class="name">chicken broth</span></li>
<li><span class="amount">2</span> <span class="name">bay leaves</span></li>
<li><span class="amount">Salt</span>, <span class="name">pepper</span> and/or <span class="name">hot sauce</span>, to taste</li>
<li>Hot <span class="name">cooked rice</span></li>
<li>Hot buttered <span class="amount">French bread</span></li>
<li><span class="amount">1 bunch</span> <span class="name">green onions</span>, sliced</li>

<li>Rinse and sort peas. (<em>Optional: Soak beans using your <a title="How to Soak Your Beans" href="http://www.camelliabrand.com/how-to-soak-your-beans-2/">preferred method</a>.</em>)</li>
<li>Heat oil in a large pot over medium-high heat. Add pickled pork; sauté 5 minutes or until browned. Add onions, bell pepper, celery, garlic and tomato paste; sauté 15 minutes. Add water or broth and bay leaves; bring to a boil.</li>
<li>Add blackeye peas, stir well and return to a low boil; cover, reduce heat and simmer 1½ to 2 hours or until peas are tender, stirring occasionally.</li>
<li>If a creamier texture is desired, use the back of a spoon to mash up to one-fourth of the beans and stir well. Adjust seasonings to taste.</li>
<li>Serve over hot cooked rice with hot buttered French bread. Garnish with chopped green onions.</li>

<li><span class="amount">8 cups</span> <span class="name">water</span></li>
<li><span class="amount">1 cup</span> uncooked fine <span class="name">bulgur wheat</span></li>
<li><span class="amount">1 cup</span> soft <span class="name">whole-wheat bread crumbs</span></li>
<li><span class="amount">1</span> <span class="name">egg</span>, beaten</li>
<li><span class="amount">½ teaspoon</span> dried <span class="name">basil</span></li>
<li><span class="amount">1</span> medium <span class="name">onion</span>, chopped</li>
<li><span class="amount">1 clove</span> <span class="name">garlic</span>, crushed</li>
<li><span class="amount">1 1/2 teaspoons</span> dried <span class="name">thyme</span></li>
<li><span class="amount">1 1/2 teaspoons</span> dried <span class="name">oregano</span></li>
<li><span class="amount">1 teaspoon</span> dried <span class="name">tarragon</span></li>
<li><span class="name">Salt</span> and <span class="name">pepper</span> to taste</li>
<li><span class="amount">3 tablespoons</span> <span class="name">tomato paste </span>or <span class="name">tomato sauce</span></li>

<ol>
<li>Rinse and sort lentils.</li>
<li>Cook lentils and bay leaf in pot with 6 cups water. Bring to a boil, reduce heat, cover and simmer until lentils are soft and water has been absorbed, about 45 minutes. </li>
<li>Combine bulgur and 2 cups water in a medium saucepan. Bring to a boil, reduce heat, cover and simmer for about 15 minutes.</li>
<li>Preheat oven to 350°F. Transfer lentils to a large mixing bowl. Add bulgur and remaining ingredients except tomato paste or sauce.  Mix well until thoroughly combined. </li>
<li>Pat mixture into a 9-inch loaf pan. Bake for 40 minutes until firm but not dry.</li>
<li>During last minutes of baking, brush top with tomato paste or sauce. Let cool for 15 minutes.</li>
<li>Cut into slices and serve warm.</li>
