<li><span class="amount">6 cups</span> <span class="name">water</span>, plus extra as needed</li>

<ol>
<li>Rinse beans thoroughly, then place in a clean, medium-size cooking pot. (Important: the pot must be free of any oil or oil residue, as oil will break down the aquafaba and render it useless.)  </li>
<li>Cover beans with water and soak for at least 4 hours, but preferably overnight. (Add extra water if needed – just enough to keep beans covered while soaking.)</li>
<li>Transfer pot of soaked beans to stove and bring to a boil over high heat for 10 minutes, then cover and reduce to a low simmer, allowing beans to cook until tender, approximately 2 hours. (Time can vary depending on type of bean; refer to package instructions.) Beans should continue to be submerged; add small amount of water if necessary.</li>
<li>Using a slotted spoon, remove cooked beans from pot and allow remaining liquid (this is the aquafaba) to cool. You should have about 2  cups of aquafaba, with a viscosity (thickness) that is slightly looser than egg whites. If you have more than 2 cups and/or the liquid seems too thin, place the liquid back in the pot and boil over medium-high heat to reduce it to a consistency closer to egg whites, approximately 10-25 minutes (depending on the volume of liquid). </li>
<li>Allow aquafaba to cool before use. Cover and store in refrigerator for up to 7 days or freeze for up to a month.</li>
</ol>
<h4>For Whipped Aquafaba:</h4>
<p>&nbsp;</p>
<ol>
<li>Allow aquafaba to cool completely in the refrigerator.</li>
<li>Add aquafaba and ¼ teaspoon cream of tartar to the bowl of a stand mixer.</li>
<li>Whip on high speed until you achieve desired stiffness of peaks, about 5 minutes for semi-soft peaks and 10-15 minutes for stiff peaks.</li>
<li>Whipped aquafaba can be covered and stored in refrigerator for up to 2 days but is best when used immediately.</li>
</ol>
<h4>Tips and Advice:</h4>

<ol>
<li>Always use an extra-clean, unoiled bowl and utensils for aquafaba recipes. Oils interact poorly with the aquafaba, particularly if you’ll be whipping it later on</li>
<li>As a general rule, 3 tablespoons of aquafaba is equal to one whole egg, while 2 tablespoons is equal to one egg white.</li>
<li>Use an ice-cube tray to freeze individual servings of aquafaba for future use.</li>
<li>Do not ever salt or season your beans while cooking them for the aquafaba! </li>
<li>When making any kind of whipped aquafaba, cream of tartar helps to make stiffer peaks a greater possibility.</li>

<li><span class="amount">1 pound</span> <span class="name">Andouille sausage,</span> cut into 1/4-inch pieces (another smoked sausage or bacon may be substituted)</li>
<li><span class="amount">1 medium</span> <span class="name">onion, diced</span></li>
<li><span class="amount">4 ribs</span>  <span class="name">celery, diced</span> </li>
<li><span class="amount">4</span> <span class="name">garlic cloves, minced</span></li>
<li><span class="amount">1 teaspoon</span>  <span class="name">dried oregano</span></li>
<li><span class="amount">1 (28-ounce) can</span>  <span class="name">whole peeled Roma tomatoes</span></li>
<li><span class="amount">3 teaspoons</span> <span class="name">Worcestershire sauce</span></li>
<li><span class="amount">2 teaspoons</span> <span class="name">fresh thyme</span></li>
<li><span class="amount">1 bunch</span>  <span class="name">green onions, chopped</span></li>
<li><span class="amount">3 cups</span> <span class="name">low sodium chicken broth</span></li>
<li><span class="amount">3 cups</span> <span class="name">Panko breadcrumbs</span></li>
<li><span class="amount">1 1/2 cups</span> <span class="name"> shredded Parmesan</span></li>

<ol>
<li>Add the navy beans, three bay leaves, and Creole seasoning to taste to a large saucepot. Add enough water to cover the beans by 3 inches. Bring to a boil and cook, adding additional water as necessary, until beans are soft, about 1 hour. Drain and set aside.</li>
<li>Heat the olive oil in a Dutch oven, preferably cast iron, over medium-high heat. Add the Andouille and cook until brown, about 10 minutes. Add the onion, celery, garlic, oregano, and Creole seasoning to taste; cook until the vegetables are tender and translucent, about 7 minutes.</li>
<li>Crush the tomatoes with your hands over the contents of the Dutch oven before adding them to the pot. Add the 2 remaining bay leaves, Worcestershire, reserved navy beans, thyme, and green onions. Add the chicken broth, and bring to a boil. Reduce the heat to medium-low and simmer until the beans have absorbed the broth, 15 to 20 minutes.</li>
<li>Meanwhile set a low broiler. Combine the Panko, Parmesan, oregano or thyme leaves, olive oil, and salt and pepper to taste. Set aside.</li>
<li>Add shrimp to Dutch oven, and cook until thoroughly pink, 8 to 10 minutes. Top with Panko mixture. Place under broiler and cook until lightly golden, 2 to 3 minutes.</li>
<li>Alternatively, the cassoulets may be broiled and served in individual ramekins.</li>

<li>Place beans in a large pot with hot water.</li>
<li>Add ham hock to pot. Cover and simmer approximately three hours, stirring occasionally.</li>
<li>Remove ham hock, and set aside to cool. Dice meat and return to soup.</li>
<li>In a skillet, sauté onion in butter. Add cooked onions to pot.</li>
<li>Bring soup to a boil, and season with salt and pepper.</li>
</ol>

<li>5-6 slices</span> <span class="name">bacon</span></li>
<li><span class="amount">1</span> medium <span class="name">carrot</span>, cut lengthwise into halves, then cut into 1-inch pieces</li>
<li><span class="amount">1 rib</span> <span class="name">celery</span>, chopped</li>
<li><span class="amount">1 cup</span> chopped <span class="name">onion</span></li>
<li><span class="amount">1</span> small <span class="name">turnip</span>, cut into 1-inch pieces</li>
<li><span class="amount">1 teaspoon</span> dried <span class="name">Italian seasoning</span></li>
<li>1/8 teaspoon black pepper</li>
<li>1 large can (<span class="amount">46 ounces</span>) <span class="name">chicken broth</span></li>
<li><span class="amount">1 cup</span> <span class="name">milk</span></li>

<li><a title="How to Cook Beans and Peas: Preparing in Advance" href="http://www.camelliabrand.com/how-to-cook-beans-preparing-beans-in-advance/">Cook</a> beans until they are tender. </li>
<li>Cook bacon in medium skillet over medium heat. Drain and crumble.</li>
<li>Combine carrot, celery, onion, turnip, Italian seasoning, pepper, beans and bacon in slow cooker; mix slightly.</li>
<li>Pour broth over top. Cover and cook on low 7 1/2 to 9 hours or until beans are crisp-tender.</li>
<li>Ladle 2 cups of soup mixture into a 4-cup container and purée in food processor or blender. Return mixture to slow cooker.</li>
<li>Add milk to slow cooker. Cover; cook on high 15 minutes or until heated through.</li>

<li><span class="name">Salt</span> and <span class="name">pepper</span> to taste</li>
<li><span class="amount">Dash</span> <span class="name">paprika</span></li>
<li><span class="amount">Dash</span> <span class="name">garlic salt</span></li>
<li><span class="amount">3 tablespoons</span> <span class="name">tomato ketchup</span></li>
<li><span class="amount">2 tablespoons</span> <span class="name">Worcestershire sauce</span></li>
<li><span class="amount">⅓ cup</span> <span class="name">brown sugar</span></li>
<li><span class="amount">½ pound</span> sliced <span class="name">bacon</span></li>

<ol>
<li>Rinse and sort beans. Cover beans with water, add ham bone, onion, bell pepper, paprika, garlic salt, salt and pepper. Cook over low fire about 1 ½ hours, or until tender.</li>
<li>Remove ham bone. Add ketchup, Worcestershire sauce and brown sugar, mixing lightly. </li>
<li>Spoon half of the mixture in a baking dish, cover with ¼ pound sliced bacon. </li>
<li>Spoon remaining half of the mixture into the baking dish and cover with remaining ¼ pound sliced bacon.</li>
<li>Bake 1 ½ to 2 hours in 350°F  oven.</li>
