<li><span class="amount">1/2 cup</span> of  <span class="name">water</span></li>
<li><span class="amount">1 teaspoon</span> of  <span class="name">lime juice</span></li>

<h3>Directions:</h3>
<ol>
<li>In a medium saucepan over medium heat, warm the oil then add the onions, stirring occasionally, until the onions have softened, about 3 to 6 minutes.</li>
<li>Pour in the beans and water. Stir, cover, and cook on medium heat for 5 to 7 minutes. Reduce the heat to low, then use a masher or the back of a fork to mash up about half of the beans. Continue to cook the beans, uncovered, stirring often, for 3 to 5 more minutes, or until thickened.</li>
<li>Remove the pot from the heat and stir in the lime juice. Taste and add more lime juice if necessary. If the beans seem dry, add small splash (1⁄2 teaspoon) of water and stir to combine. Cover until you’re ready to serve.</li>

<li>Cook red beans with Red Bean Flavor Infusion according to package directions. Drain excess liquid, reserving 1/2 cup. Measure 2 1/2 cups cooked beans for use in recipe, and store remainder.</li>
<li>Heat oil in a skillet over medium heat. Sauté onions and garlic until soft, about 3-4 minutes.</li>
<li>To a blender or food processor, add 2 1/2 cups cooked beans,  sautéed onion and garlic, 1/2 cup roasted red peppers, and cayenne or hot sauce. Add lime juice. Blend, adding reserved bean liquid until smooth.</li>
<li>For a creamier dip, add and blend sour cream or Greek yogurt until fully incorporated.</li>
<li>Taste and adjust seasoning as needed with salt and pepper.</li>
<li>Garnish with cilantro, green onions, shredded cheese, finely chopped bell pepper, and sliced jalapeno or serrano peppers, if desired.</li>
<li>Serve with bell pepper slices, chips, or crackers.</li>

<li>In a medium saucepan, heat 1 tablespoon oil over medium-high heat. Add onion and garlic, and cook, stirring constantly, until tender, 2 to 3 minutes. </li>
<li>Add 2 1/2 cups water, rice, salt, and remaining 2 tablespoons oil. Bring to a boil over medium-high heat. Reduce heat to medium, cover, and cook, stirring occasionally, until rice is tender and liquid is absorbed, about 20 minutes. </li>
<li>Remove from heat, and let stand, covered, for 15 minutes. Add lime zest and juice, and fluff with a fork. Stir in cilantro and avocado.</li>

<li>In a small saucepan over medium heat, heat oil. Add onions, stirring occasionally, until softened, about 3 to 6 minutes. Add cumin and cook, stirring constantly, until fragrant, about 30 seconds.</li>
<li>Add cooked beans and water to saucepan. Stir, cover, and cook over medium heat for 5 minutes. Reduce heat to low.</li>
<li>Use a potato masher or the back of a fork to mash about half of the beans. Continue to cook, uncovered, stirring often, for 2 to 3 more minutes or until thickened.</li>
<li>Remove saucepan from heat and stir in pepper and lime juice. Adjust seasonings to taste, adding more salt, pepper, and lime juice if desired. If beans are dry, add small splash (½ teaspoon) of water and stir to combine.</li>
<li>Cover until ready to serve.</li>

<h4>Creole Shrimp</h4>
<ul>
<li><span class="amount">1 lb.</span> <span class="name">shrimp</span></li>
<li><span class="amount">2 teaspoons</span> <span class="name">Creole seasoning</span>, or to taste</li>
<li><span class="amount">1 tablespoon</span> <span class="name">olive oil</span> or <span class="name">butter</span></li>
</ul>
<h4>Tortillas and Toppings</h4>
<ul>
<li><span class="amount">8 small</span> <span class="name">corn tortillas</span></li>
<li><span class="amount">1-2 cups</span> <a href="https://www.camelliabrand.com/how-to-cook-beans-preparing-beans-in-advance/" target="_blank" rel="noopener">cooked Camellia Brand Red Kidney Beans</a></li>
<li>Diced <span class="name">avocado</span></li>
<li><span class="name">Cotija cheese</span></li>
<li>Chopped <span class="name">cilantro</span></li>
<li><span class="name">Lime</span> wedges</li>

<h3>Directions:</h3>
<ol>
<li>Add all coleslaw ingredients (except for cabbage) to a food processor or blender, and pulse until smooth. In a bowl, toss 3/4 of the dressing with shredded cabbage and refrigerate. Reserve the rest of the dressing for topping tacos.</li>
<li>Pat shrimp dry. To a bowl, add shrimp and Creole seasoning. mix thoroughly to cover shrimp with seasoning.</li>
<li>In a wide skillet, heat oil or butter over medium heat. Add shrimp in a single layer to hot skillet, and sauté just until shrimp are seared and cooked through (pink). Be careful not to overcook.</li>
<li>Warm tortillas by wrapping in aluminum foil and heating in a 350° oven for 15-20 minutes. Or, heat individual tortillas over a gas burner flame, using tongs to flip and slightly char each side.</li>
<li>Add cooked shrimp, red beans and cilantro lime coleslaw to warm tortillas. Top with additional dressing, if desired, and add other toppings to taste.</li>

<li>Make the dressing: In a small bowl, whisk together the oil, vinegar, lime juice, Cajun seasoning and minced garlic; set aside.</li>
<li>In a large bowl, combine the cooked beans and peas, poblano pepper, corn, red onion and cilantro. Add the dressing to the bean mixture, tossing to combine. Add the diced tomato last, gently tossing to combine.</li>
<li>Cover and chill for up to 2 hours.</li>
<li>Serve with tortilla chips for scooping.</li>

<ol>
<li>Heat large skillet over medium heat. Add olive oil, and heat until oil shimmers. Add shrimp and minced garlic to skillet. Add Creole or Cajun seasoning to taste and red pepper flakes. Cook shrimp, stirring once or twice, until they are just pink, about 4 minutes. Pour the contents of the skillet into a bowl, and set aside.</li>
<li>Set the same skillet over high heat. Add broth, water, rice, more Creole or Cajun Seasoning to taste, and minced scallions. Bring to a boil, and stir to blend. Reduce heat to low, and cover. Cook until rice is tender but not sticky, about 20 minutes.</li>
<li>Remove skillet from heat. Mix in 2 tablespoons lime juice, cooked black beans, and chopped cilantro. Gently combine the shrimp mixture with the rice mixture. Add remaining tablespoon of lime juice, and stir gently to combine. Gently reheat or serve at room temperature.To serve, garnish with sliced scallions and additional chopped cilantro.</li>

<li><span class="amount">1 </span>fresh <span class="name">jalapeño pepper</span>, seeded and finely chopped</li>
<li><span class="amount">1 clove</span> <span class="name">garlic</span>, minced</li>
<li><span class="name">Salt</span> to taste</li>

<h4>Burritos</h4>
<ul>

<li><span class="amount">8</span> <span class="name">eggs</span></li>
<li><span class="amount">8</span> flour <span class="name">tortillas</span></li>
<li><span class="amount">1 1/2 cups</span> shredded <span class="name">Mexican-style cheese blend</span></li>
<li><span class="amount">1-2</span> large <span class="name">avocados</span>, chopped</li>
<li><span class="name">Salt</span></li>

<h3>Directions:</h3>
<p><strong>Salsa:</strong></p>
<ol>
<li>Combine the tomatoes, green onions, cilantro, lime juice, jalapeno pepper, 1 clove mined garlic, and salt to taste, together in a bowl until well blended.</li>
<li>Cover and refrigerate until needed.</li>
</ol>
<p><strong>Burritos:</strong></p>
<ol>
<li>Warm beans in a saucepan (if they are cold).</li>
<li>Heat oil or butter in a large skillet. Whisk eggs in a large bowl, pour into skillet and scramble. Set aside and keep warm.</li>
<li>Heat the tortillas in oven or directly on gas burner, flipping with tongs.</li>
<li>Spoon beans, eggs, cheese, salsa, and avocado onto flat tortillas. Season with salt to taste.</li>
<li>Roll into burritos.</li>
