<li>In a large Dutch oven, bring beans and 8 cups water to a boil over medium-high heat. Reduce heat to medium; gently boil beans until tender and most of liquid is evaporated, stirring occasionally, 45 minutes to 1 hour. Drain beans. Wipe out Dutch oven.</li>
<li>In the container of a blender, combine 2 cups cooked beans and 1 cup broth; process until completely smooth.</li>
<li>In the same Dutch oven, heat oil over medium heat. Add onion and carrot; cook until softened, stirring occasionally, 6 or 7 minutes. Add garlic, salt, and pepper; cook for 2 minutes. Add cooked beans, chickpeas, and rosemary. Stir in puréed bean mixture and remaining 5 cups broth. Bring to a boil; reduce to a simmer and cook, uncovered, until soup slightly thickens, 20 to 25 minutes. </li>
<li>Stir in collards and cook for 20 minutes. Stir in lemon zest and juice. Gradually sprinkle in Parmesan, stirring constantly (don’t add cheese all at once or it may clump). </li>
<li>Garnish with additional rosemary, zest, and Parmesan, if desired. Serve with bread.</li>

<li>Soak beans in 4 cups of cold water for 6 hours or overnight. Drain, rinse, and add beans to a medium-sized pot. Cover with 3 to 4 cups of fresh water. Bring to a boil, and lower heat to a simmer. Allow beans to simmer, partially covered with a tilted lid, for 1 ½ hours or until soft. Stir occasionally and add water, as necessary. Drain and set aside.</li>
<li>Bring a large Dutch oven of salted water to a boil over high heat. Add fettuccine and cook, stirring often, about 6 minutes. Drain, reserve 1/2 cup of cooking water for later use, and rinse fettuccine under cold water until cool. Transfer noodles to a bowl and toss with a tablespoon of oil to coat. Set aside.</li>
<li>To the same large Dutch oven, add remaining 1 tablespoon of oil and cook over medium-low heat. Add leeks and 1/2 teaspoon salt. Cook, stirring often, until softened, about 10 minutes. Add garlic and crushed red pepper; cook, stirring often, until fragrant, about 1 minute. </li>
<li>Add beans (reserving 1/4 cup of beans to toss with pasta), broth, sage, and 1/2 teaspoon of the lemon zest (reserve the rest for garnish). Bring to a boil and then remove from heat. Use an immersion blender to blend till creamy.</li>
<li>Bring mixture back to a simmer and add lemon juice. Cook until thickened but still soupy, about 6 minutes. Stir in cream, Parmesan, and reserved 1/4 cup of beans. Add pasta and stir until heated through, about 2 minutes. If needed, add reserved cooking water for thinning. </li>
<li>Serve sprinkled with remaining lemon zest, parsley, red pepper flakes, and more cheese, if desired.</li>

<li>Rinse and sort beans. Soak overnight and drain.</li>
<li>Break down rabbit into pieces, season as desired, and set aside.</li>
<li>Add a glug of olive oil to a large Dutch oven, and cook onions, celery, and carrots until soft. Add garlic.</li>
<li>Add in bay leaves and Italian seasoning. </li>
<li>Deglaze the pot with a little red wine. Add chicken stock and beans to pot. Simmer 2-3 hours, or until beans start to soften. </li>
<li>In a separate large pot, brown the seasoned rabbit pieces, remove and set aside. Cut chorizo from casing and brown in large chunks. Remove chorizo, set aside, and discard grease from the pot. Deglaze the pot with wine and add to the stew. </li>
<li>Add rabbit pieces to the stew pot and allow to tenderize. </li>
<li>In a separate bowl, hand-crush whole tomatoes and set aside. </li>
<li>When the rabbit meat and beans are tender, and the stew has almost reached desired thickness, add crushed tomatoes and chorizo. Simmer for 30 more minutes.</li>
<li> Add torn fresh basil.</li>
<li> Serve with crusty bread and a glass of Spanish wine!</li>

<li>Rinse beans thoroughly, then place in a clean, medium-size cooking pot. (Important: the pot must be free of any oil or oil residue, as oil will break down the aquafaba and render it useless.)  </li>
<li>Cover beans with water and soak for at least 4 hours, but preferably overnight. (Add extra water if needed – just enough to keep beans covered while soaking.)</li>
<li>Transfer pot of soaked beans to stove and bring to a boil over high heat for 10 minutes, then cover and reduce to a low simmer, allowing beans to cook until tender, approximately 2 hours. (Time can vary depending on type of bean; refer to package instructions.) Beans should continue to be submerged; add small amount of water if necessary.</li>
<li>Using a slotted spoon, remove cooked beans from pot and allow remaining liquid (this is the aquafaba) to cool. You should have about 2  cups of aquafaba, with a viscosity (thickness) that is slightly looser than egg whites. If you have more than 2 cups and/or the liquid seems too thin, place the liquid back in the pot and boil over medium-high heat to reduce it to a consistency closer to egg whites, approximately 10-25 minutes (depending on the volume of liquid). </li>
<li>Allow aquafaba to cool before use. Cover and store in refrigerator for up to 7 days or freeze for up to a month.</li>
</ol>
<h4>For Whipped Aquafaba:</h4>

<li>Allow aquafaba to cool completely in the refrigerator.</li>
<li>Add aquafaba and ¼ teaspoon cream of tartar to the bowl of a stand mixer.</li>
<li>Whip on high speed until you achieve desired stiffness of peaks, about 5 minutes for semi-soft peaks and 10-15 minutes for stiff peaks.</li>
<li>Whipped aquafaba can be covered and stored in refrigerator for up to 2 days but is best when used immediately.</li>
</ol>

<li>Always use an extra-clean, unoiled bowl and utensils for aquafaba recipes. Oils interact poorly with the aquafaba, particularly if you’ll be whipping it later on</li>
<li>As a general rule, 3 tablespoons of aquafaba is equal to one whole egg, while 2 tablespoons is equal to one egg white.</li>
<li>Use an ice-cube tray to freeze individual servings of aquafaba for future use.</li>
<li>Do not ever salt or season your beans while cooking them for the aquafaba! </li>
<li>When making any kind of whipped aquafaba, cream of tartar helps to make stiffer peaks a greater possibility.</li>

<ol>
<li><em>For the White Bean Cheese Sauce</em>, soak beans in cold water for 6 hours or overnight. Drain, rinse, and add beans to a medium-sized pot. Cover with 3 to 4 cups fresh water. Bring to a boil, and lower heat to a simmer. Allow beans to simmer, partially covered with a tilted lid, for 45 minutes or until soft. Stir occasionally and add water as necessary. Drain and set aside.</li>
<li>To a blender or large container (if using a hand blender), add beans and milk. Blend on high speed until beans and milk are totally smooth. Transfer to a small pot over medium heat.</li>
<li>Add shredded cheddar to pot, whisking continuously as it simmers. Add Cajun seasoning to taste, if desired. Remove from heat and use sauce immediately, or store.</li>
<li><em>For the Pickled Red Onions</em>, add sliced onions to a container that has a tight lid; mason jars work well.</li>
<li>Add the next 4 ingredients to a small pot over medium high heat. Bring to a boil, making sure that the salt and sugar dissolve completely.</li>
<li>Remove from heat, and pour over onions. Add crushed red pepper flakes to mixture, if desired.</li>
<li>Allow onion mixture to cool to room temperature; cover with lid and refrigerate until ready to use. Wait 2 hours before using.</li>
<li><em>For the Nachos</em>, preheat oven to broil. Spray a parchment-lined sheet pan with vegetable oil. Layer tortilla chips with white bean cheese sauce, sauteed crawfish, Cajun caviar, and Monterrey Jack cheese. Place in oven until cheese is melted.</li>
<li>Garnish with pickled red onions, serrano pepper slices, cheese, and cilantro. Top with <a href="https://www.camelliabrand.com/recipes/spicy-avocado-crema/">Spicy Avocado Crema</a>.</li>

<ol>
<li>Add oil to a large Dutch oven set over medium-high heat. Add onions and cook until translucent, about 4 minutes.</li>
<li>Add Hatch chilies (or Poblano chilies), green chilies, garlic, beans, 7 cups broth, chicken, and spices. Stir to combine thoroughly.</li>
<li>Bring to a boil. Cover, reduce heat to low, and cook for about 2 hours, stirring occasionally, until the beans are soft but not falling apart. Add additional broth as necessary. If desired, remove and shred chicken, and add back to pot.</li>
<li>In a mixing bowl, mix the heavy cream (or milk) with the masa (or cornmeal). Use an immersion blender or whisk to combine thoroughly, and pour the mixture into the chili. Stir well.</li>
<li>Cook 10 more minutes to thicken the chili, and heat thoroughly. Adjust seasoning with salt and white pepper as desired.</li>
<li>Serve with toppings and warm tortillas on the side, if desired.</li>
